These are just a few techniques I have come in contact with. Some of them are likely on here already, its hard to keep track of them all:

Lucid Dreaming:

Nova Dreamer- Some sort of thing you put over your eyes that detects when you are entering the rem state, and sends flashing images to tell you that you are dreaming.

Dream Characters- When you become at all lucid, creating a character in your dream that will remind you in future dreams that "hey, you aren't awake!"

Constant dreamchecking- Obviously doing dream checks so often that you eventually start doing them in your dreams
Checks include: checking a watch
clicking a light switch
plugging your nose and trying to breath through it
looking at your hand
You can also set alarms to remind yourself to do a dream check.
Or when in a dream try to keep your concentration on track by counting to 100, or something else like that.

A 'special drink' made of things including salt, milk, mushy ceral brumbs, and god knows what else, but DO not attempt this. Results aren't good, and god does it taste bad. Perhaps it was more of a mind over matter thing "drinking this will help me", but its bad.

Astral Projection/OBE:
Start with a Lucid dream, and go from there.

Lay down, make sure you don't mentally fall asleep, but physically loose touch with your body. To help with this you can for example climb up/down a mental ladder, or do mental snow angles.

To get out of your body you can try:
Imagining a rope hanging above you, and holding onto the rope and pulling your self up
Imagining a falling jolt that will seperate your astral body and your physical body
In your mind walking down a hallway and going through a door- as a metaphor for you leaving your body
Just plainly sitting up out of your body

If you have any more to add, or your experiences with any of these please post.

Yeah, I find that one most effective, as I never actually come in contact with light switches or clocks in my dreams, but do sometimes think of doing the nose thing.
